Serves 4
Ingredients:
1 tablespoon avocado oil
12 egg whites
2 cups spinach, chopped
2 cups cherry tomatoes, quartered
2 tablespoon nutritional yeast
¼ teaspoon black pepper
Directions:
1. Preheat oven to 400F. Lightly coat the bottom of a large shallow oven-safe baking dish with avocado oil.
2. In a medium mixing bowl, combine well: egg whites, spinach, tomatoes, nutritional yeast and black pepper.
3. Bake in the oven for 30-35 minutes until egg whites are cooked through, and edges are lightly browned. Slice into 4 pieces and have an easy heart healthy meal prepped ready for the week!
